Preheat oven to 450 degrees.
Rub olive/coconut oil on each whole hen.
Mix rosemary, garlic, salt, pepper, garlic powder and parsley together in a small bowl.
Rub mixed spices all over each whole hen.
Loosen the skin by running a finger under it.
Place one tablespoon of butter under each skin.
Tie legs together with kitchen string so the hen will cook evenly.
Place hens in baking dish.
Bake for about 50 minutes.
Let hens rest for 10 minutes.
