An Easy Mixed Berry Cobbler You’ll Love

This mixed berry cobbler is a favorite of my mom!

We just recently celebrated her birthday and I gave her a few options, including chocolate, yet this is what she chose 🙂

Now, I’ll admit it, I will almost always have a chocolate dessert over a fruit one any day but I’ll also admit that this one fits the sweet bill too.

This mixed berry cobbler is adapted from a Betty Crocker recipe.

The berries

You can use fresh or frozen.

We are not the best at using fresh berries before they go bad.

But we always have frozen berries and the recipe works perfectly with them.

The dough

The steps

There are two major steps to this recipe but they are simple steps.

First Step for Mixed Berry Cobbler

First, add the mixed berries, sugar, arrowroot (cornstarch), water and lemon juice to a skillet or saucepan.

(Side note: We, for some reason, don’t have cornstarch in the house but we have arrowroot.)

After having done some research, they help do the same thing – thicken the juice.

You can’t taste it and it does it’s job perfectly so if you don’t have one you can certainly use the other!

Stir it all together while it heats to a boil.

Once it’s simmering/boiling, give it another minute or so then turn off your heat.

Second Step for Mixed Berry Cobbler

The second step, mix the cobbler topping together.

Pour the berry mixture into your pie/baking dish.

Either drop spoonfuls of the dough on top of the mixture.

Or, what I like to do sometimes, is sorta pat the dough into flat pancakes and lay them on top.

This way the majority of the mixed berry cobbler is covered with the yummy ‘crust’ rather than just sections of it.

Then bake it for about 15 minutes in your favorite baking dish.

The dough should be nicely browned and not soft.

It’s up to you after that 🙂

You can either gobble it up right away with your favorite vanilla ice cream.

Or save it for later or even another day.

My suggestion though, at least warm up the cobbler before you enjoy it.

Mixed Berry Cobbler

The best mixed cobbler recipe, using either fresh or frozen berries.
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 6

Ingredients
  

  • .5 cup sugar
  • 1 tbsp arrowroot (cornstarch)
  • 6 cups mixed berries
  • 2 tbsp water
  • 1 tsp lemon juice
  • 2 cups Bisquick mix
  • .5 cup milk
  • 2 tbsp sugar
  • 2 tbsp butter melted

Instructions
 

  • Heat the oven to 425 degrees.
  • Add .5 cup sugar, arrowroot, mixed berries, water, and lemon juice to skillet.
  • Stir everything together while you bring the mixture to a boil.
  • Let it boil while the sauce thickens. Stir occashionally.
  • Turn off the heat while you put together the topping.
  • Mix together the Bisquick mix, milk, sugar and melted butter in a medium bowl until fully combined.
  • Pour the mixture into your pie/baking dish then top it with the dough.
  • Either drop the dough onto the mixture in spoonfuls or create pancake-like drops and spread around the mixture.
  • Bake the cobbler for about 15 minutes, until the dough has browned and no longer doughy.
  • Serve immediately with your favorite ice cream or save for later.
  • Best served warm 🙂
